It's a game changer for sure. I do plenty of brine and injections on other recipes, but can't really call that central Texas turkey breast lol the point of this style recipe is to allow the mild flavor of the meat to absorb that gentle smoke as deeply as possible for flavor.

Mar 23, 2022 · Bone in turkey breast. Brined for at least 12 hours. Season liberally with Holy Cow from Meat Church. Create a brush out of bruised rosemary, thyme, sage, and parsley and use it to baste the breast with melted, unsalted Kerrygold butter every 20 minutes or so after the skin sets up the way you want.

Oct 20, 2022 · It is important to note, this calls for a 3 day dry brine. That is the flavor. It says 5 minute prep time: realistically it should be 3 days + 5 minutes. I wouldn’t dry brine longer, shorter is ok just less flavor will permeate the bird. I have only done this with a 3 day brine on a big bird, but it is the same as dry aging any meat.
