Dec 3, 2020 · I definitely prefer a blind baked crust for both pecan and pumpkin pies. I bake at 375 for about 15 minutes with weights then take it out, fill, and bake. For pies that will not be further baked (like chocolate/banana cream) I put the crust back in for 15-20 minutes after the first bake with the weights. 11. Reply.

Blind-bake at 350°F for an hour, leaving the weights in the pie shell the whole time. Once I started doing this (rather than starting at a higher temperature, then removing the weights and lowering the temperature partway through), it made a big difference in reducing crust shrinkage/distortion.

Aug 14, 2021 · When making something like an apple pie, cherry pie, pumpkin pie, where the filling needs to be cooked in the crust, you don't need to blind bake. Just be sure you bake it long enough for the bottom to be fully baked or else it can be soggy. If the edges are getting browned too quickly, you can cover in foil and continue baking.

If yours is homemade then do blind bake with any custard pies. I see so many blogs with basically unbaked bottom crust in their pie recipes. It only takes 20ish minutes and will give you great results. Erin Jeanne McDowell has great videos on youtube with Food52 all about pies and what to look for in a properly blind baked crust.

Blind baking is used when you're using a filling that you're not also baking. So, an apple pie, cherry pie, mince pie, pot pie...you wouldn't blind bake the crust for those because you'd be baking the filling as well.
