GTA Online is no longer compatible with Steam Deck due to anti-cheat, but a simple action from Rockstar could solve the problem.

Grand Theft Auto Online received an update, with the PC port of the crime sim finally getting anti-cheating software. Yet not everyone is happy, as this update has now made it impossible to play GTA Online on Steam Deck.

For now, players can still access the single-player mode of GTA V on the Steam Deck. Rockstar Games' FAQ confirms that while Story Mode remains playable, GTA Online will remain inaccessible on the device.
